Matcha Green Tea Overnight Oats
Matcha green tea. It's all the rage these days. And just what the heck is matcha you ask? It is stone ground tea leaves that provides you with green teas arsenal of vitamins, minerals and antioxidants that no other green tea can. One serving of matcha is also said to be the nutritional equivalent of 10 cups of regular brewed green tea. There are so many other health benefits to this super-food--read more here.
After days and days of drinking matcha lattes, I started thinking of alternate ways to get my matcha on. I didn't want to risk baking with this pricey superfood so I decided to put a matcha twist on a favorite breakfast in this house, overnight oats. And let me just say, boo-yah! These matcha overnight oats came out grrreat (yes, Tony the Tiger great).
MATCHA OVERNIGHT OATS
[Makes 2 servings}
I made this particular batch of overnight oats in a nearly finished jar of sunbutter but you can always use a mason jar or a bowl. Also, we shall talk about sunbutter in another blog post. I. Am. Obsessed.
1c Oats (Rolled, Steel, Instant, whatever. I've tried them all and I didn't notice any difference)
2tbs Plain Greek Yogurt (vanilla would be good too!)
1.5tbs Matcha Green Tea Powder (more or less depending on how you like the taste)
*I used U-Matcha Natural by The Republic of Tea which is pricey however, Trader Joe's makes single serve matcha packets that are fantastic!
1tbs ground cinnamon (I'm a big cinna lover so you may want to scale back if it's not your jam)
1/2c Cashew milk (if your fancy. you can always use whatever milk you have on hand)
1tbs vanilla (optional to use your fave sweetener of choice
Add all ingredients into a bowl or mason jar if you don't have a nearly finished jar of nut butter on hand. Mix well, refrigerate overnight.
Add your favorite toppings and enjoy as breakfast or a snack!
Have you tried matcha? What did you think? Any recipes or unique ways you enjoyed it? I'd love to hear it!
