Sweet Potato Peanut Butter Smoothie
First things first, do you add an e on the end when you spell potato(e)?! I really struggled with that for a solid 3 minutes. Ok, so this smoothie! It is hearty and delish. It tastes a lot like sweet potato(e)--(still can't get over it) pie! And when I say pie I mean rich in protein, no added sugar and loaded in nutrients. Maybe pie isn't the best comparison here......
For those of you "I can't eat breakfast" folks, this is a great make and go breakfast! For starters it tastes more like a dessert and it's only 5 ingredients, 4 ingredients if you decide to nix the protein powder. I bet it will surprise your taste buds so much that you turn into a breakfast eating machine.
For all of you "I like to eat all the time" people like me, this is a great smoothie to enjoy any time of day.
SWEET POTATO PEANUT BUTTER SMOOTHIE
1/2C cooked sweet potaoe
1TBS peanut butter
1 scoop vanilla protein powder, I use About Time Whey Isolate
1C almond milk
A handful of ice
Add all ingredients to a blender and blend until well combined.
I topped my smoothie with bee pollen and hemp seeds. If you need a cookie for dipping like I did here, make these protein peanut butter cookies! I skipped the choc chips in the recipe because I didn't have any on hand.
