CEVICHE STUFFED AVOCADOS
I know what you're thinking...or at least what some of you might be thinking. What the heck is Ceviche?! Ceviche is a seafood dish that is popular in Latin America. It is traditionally prepared by taking raw seafood like fish or shrimp and cooking it in lemon juice--which takes hours! While it certainly is tasty prepared that way, I grew up with an alternate way to enjoy ceviche. A much more simple and quicker way to make it. We'll use imitation crab in this recipe which also happens to be pretty good source of protein. Add a plethora of fresh veggies to the mix and you have a nutritious meal to enjoy. This is my 15 minute recipe. Inspired by my Mama.
CEVICHE STUFFED AVOCADO RECIPE
2--8oz flake style crab meat (find in your local produce dept)
1/2 diced purple onion
1 diced bell pepper (use your fave color!)
1 small cubed cucumber
1 diced jalapeno (if you can take the heat)
1 generous handful of cilantro chopped
Juice of 4 lemons
Salt and pepper to taste
4-5 large ripe avocados cut in half
In large bowl add flake style crab meat, (pull apart into medium chunks with your hands), diced purple onion, diced bell pepper, cubed cucumber and diced jalapeno and top with lemon juice, salt and pepper and cilantro. Mix well. For maximum flavor let the ceviche marinate over night in the fridge--I promise it's worth it!
Take your halved avocados and scoop a bit of the meat out to make a deeper hole so you can add a generous amount of ceviche inside. Don't be Ludacris and toss the extra avo--seriously. Top the ceviche stuffed avocado with the extra avo. Add a little hot sauce if you want to take the heat up.
If you don't have avocado on hand you can enjoy the ceviche by itself or with your favorite crackers or chips.
