Roasted Trailmix w/Cocoa-Maca bark
I teamed up with Swanson Vitamins to create this homemade roasted trail mix with coca-maca bark! So trail mix! I know what you're thinking, "no big deal, I can buy this at the store". Yes you can but the pre-packed stuff can easily result in sugar overload with all of the chocolate or dried fruit included, not to mention the hefty price that comes along with it. Why not build your own trail mix by adding your favorites and save yourself the time of picking out the stuff you don't like.
And trail mix makes a great snack! I am a major snacker and I need to have nutritious options in the house or on the go to keep me satisfied otherwise I'll make impulse unhealthy food decisions or even worse be hangry--nobody wants to see me like that, ever. This roasted trail mix is a great option. It is both savory and sweet and has your healthy fats and includes the super food, goji berries that are rich in nutrients.
You can easily whip up a big batch of this trailmix for the family to enjoy. Loaded with roasted nuts, coconut chips, goji berries, and cocoa-maca bark, it will please everyone. Enjoy this trail mix by the handful, top your favorite flavor yogurt with it or you can even add it to your oatmeal!
ROASTED TRAILMIX W/COCOA-MACA BARK
1C Swanson Organic Pistachios (don't make your life difficult like I did, buy the pitted pistachios)
1C Swanson Brazil Nuts (I smashed these up as they were very big)
2TBS Coconut oil
*add 1TBS natural sweetner of choice if desired. I prefer my chocolate bitter so I skipped that step.
Preheat oven to 375
Add nuts to a baking sheet and bake until brown, about 8-10 min. Keep an eye on these as you don't want them to burn. Allow nuts to cool and add them to a mason jar along with goji berries and coconut chips.
To make the cocoa-maca bark, simply add all 3 ingredient to a microwave safe bowl and microwave until coconut oil and butter melts, about 45 secs.
Mix ingredients well and pour onto a wax paper lined baking sheet. Let cool in freezer for 15 min or until hard. Next break up the bark into pieces by pull up the wax paper and folding it different ways. Finally add your bark to the mason jar with the other ingredients, shake and store in a cool dry place or in the fridge.
*coconut oil will melt when it reaches a certain temperature so in order to keep cocoa-maca bark from melting you will want to store this in a cool dry place or better yet in the fridge
