manchengo-lime shishito peppers
Shishito peppers, ever heard of em'? They are Japanese peppers that are said to look like a lion's head. 1 in 10 peppers is extremely spicy however in my experience of consuming these I have yet to find that one super hot pepper!
I discovered these over the summer in California at a Long Beach pub my sister was serving at. She recommended them as an appetizer during my visit and they were unreal. I hadn't thought about recreating the dish until last week. During my weekly trip to Trader Joe's, I noticed a package of shishito peppers on the shelf (first time ever) and was immediately reminded of those tasty peppers I had over the summer. I threw the bag of peppers in my basket with the idea that I would make that savory appetizer I enjoyed months prior. This 4 ingredient recipe will blow your taste buds away and can be enjoyed with any dish. Make a large batch to get you through the week and enjoy with every meal!
- 1LB shishito peppers
- A generous drizzle of olive oil
- Squeeze of a 1/2 large lime
- 1/2 cup shredded manchengo cheese
- pinch of sea salt--to me not necessary as the cheese has enough salt
Preheat oven to 400 degrees
The package of peppers I bought came pre-washed but feel free to run your shishito peppers in water and pat dry if they do not come pre-washed.
Lay your peppers on a baking sheet, drizzle with OO and roast for 20 min.
Immediately squeeze lime on the peppers, add manchengo cheese on top and serve.
There you have it folks, the easiest side dish ever. Seriously tasty and goes with anything. Enjoy!
