no fuss fridge fudge bars

These bars! Both delectable and healthy, I still can't believe it. Raspberries, almonds, cacao nibs, and coconut butter--did I just list out health foods that make up a dessert? Yes, yes I did.

No fancy occasion needed to no bake these fudge bars. In fact the recipe is so easy, I bet these will be a regular item on your menu. 

Ingredients:
1 C coconut oil
1/2 C unsweetened cocoa powder and more for dusting the top
1/4 C honey or maple syrup
Pinch of salt
1/2 C frozen raspberries (make these yourself, store bought won't cut it)
1/4 C nuts of your choice, I used pecan and sliced almonds
2 TBS cacao nibs


Method:

Line a small loaf pan with parchment paper, set aside. Next add coconut oil to a bowl and microwave until melted. Add cocoa powder, honey and salt, whisk until smooth. Next fold in your nuts, berries and cacao nibs then pour mixture into loaf pan. Let refrigerate for at least an hour or cut the time in half if you freeze them. Finally use the parchment paper almost like a sling to transfer to a cutting board so you can slice easily and dust with more cocoa powder to top it off. Be sure to keep these in a cool place as the main ingredient is coconut oil so these will melt if they get too warm. These hold up really well in the freezer. If too frozen to enjoy right away, leave on the counter for 10-15 minutes for delightful eating.
