Super Bowl Snack - Baked Chicken Strips
The real battle on Super Bowl Sunday is the super snack bowl! Intercept empty calories and sugar by making lighter versions of traditional snacks everyone will enjoy.
Score big tomorrow with these baked chicken strips. You can quickly prep tonight and bake them right before the big game. My crunchy garbanzo bean recipe would also score you some major points. Find the recipe here.
Preheat oven to 400.
Feeds about 5 people.
5 chicken breasts sliced into strips
4 egg whites
Hot sauce (I used buffalo here)
3 C panko bread crumbs
1 C almond flour
3 TBS olive oil
5 TBS Mrs. Dash onion and herb seasoning
4 TBS onion powder
Crushed red pepper flakes (as much as you can handle)
Salt and pepper to taste
In a small bowl add eggs whites
In a separate bowl add 1/2 cup of hot sauce
Blend all batter ingredients (olive oil too) pulse a few times until everything is mixed well, Be sure not to over mix, you still want that nice crunch
Take each chicken strip and dip in egg whites, followed by hot sauce and coat well with the batter. I found that pressing down the batter helped it stick better.
Add all coated chicken strips to a baking sheet, spray with coconut oil to achieve a nice golden brown crust and for about 30 min.
Dipping sauce idea:
1. Take equals parts of your favorite BBQ sauce and Siracha. Mix well and dip!
2. Mix ketchup, Greek yogurt and as much curry powder as you can handle.
3. Mix Greek yogurt, dijon mustard, a squeeze of lemon and lemon zest.
